Easy Chicken Fajita Bowl with Homemade Corn Salsa

This is a healthy quick and easy recipe for a Fajita Style Chicken with a Jalapeño and Corn Salsa and Black Beans.

I first cut 2 Chicken Breast into about one-inch cubes.

I then place the chicken into a ziplock bag and mix with 2 tablespoons of fajita seasoning.

I then heat up 1 tablespoons of olive oil in a pan, then place the chicken into the heated oil for approximately 6 minutes each side.

While the chicken is cooking, I dice 2 ounces of white onions, 1/2 a red pepper and 1/2 ounce of Jalapeños.

I then mix corn, peppers and onions into a bowl and pour 1 teaspoon of the Jalapeño juice into the bowl and mix together.


For the Black Beans, I drain and rinse them under cold running water and cook in a pot until warm.

Once the Chicken is done combine into a bowl with Corn Salsa, and Black Beans serve, Enjoy!!!

Ingredients: (3 Servings)

Chicken:

  • 2 Large Chicken Breast
  • 2 Tablespoons Fajita Seasoning

Corn Salsa:

  • 2 Ounces of Diced White Onions
  • 1/2 a red pepper
  • 1 can of Corn 
  • 1/2 ounce of Jalapenos.
  • 1 teaspoon Jalapeno Juice

1 can of Black Beans

Directions:

For the Fajitas:
